Ingredients: simple, total time: 55 min., 15 coconut rolls
  • 200 g of flour 00

  • 100 g of coconut flour

  • 100 g of sugar

  • 100 g of melted butter

  • 1 large egg/ or 2 small eggs

  • 50 ml olive oil EVO

  • 1/2 bag of baking powder/ 7 g

  • 1 bag vanilla sugar/ 10 g

  • powdered sugar for rolling

Preparation:
  1. In a mixing bowl, knead the flour combined with baking powder, then incorporate the coconut, sugar, and vanilla.

  2. Add the egg and melted butter, and continue kneading the dough by hand until it achieves a smooth and fine consistency.

  3. Divide the dough into 50-gram portions, rolling each into a ball with your palms. Knead until the dough is soft, then shape them into rolls. Slightly flatten each roll with your fingers to refine the shape.

  4. Place the rolls on a baking tray lined with parchment paper and bake in a preheated fan oven at 180°C for approximately 20-22 minutes, ensuring they remain light in color. If your oven tends to run hotter, adjust the temperature to 170°C.

  5. Allow the baked rolls to cool for about 10 minutes before transferring them to a plate. Dust with powdered sugar.

  6. Serve alongside coffee or tea.

  • If the dough remains crumbly and does not come together, incorporate a bit more oil and one egg.
