Delicious Risotto with mixed Seafood in Creamy sauce
Since I have a profound love for risotto, I always enjoy experimenting with different methods of preparation to create unique and delicious variations of this classic dish. In this particular recipe, I employed a special cooking technique that elevates the flavors and aromas of the ingredients, resulting in an incredibly satisfying culinary experience.
Preparation and Ingredients
To prepare this exquisite risotto, you will need a selection of high-quality ingredients: extra virgin olive oil, which adds a rich depth of flavor; Arborio rice, known for its creamy texture; a flavorful tomato passato sauce to create a luscious base; fresh tomatoes for added brightness; and a well-prepared bouillon that enhances the overall taste.
Additionally, I included an assortment of seafood, such as mussels, shrimp, and prawns, which contribute a delightful brininess and complexity to the dish. Aromatic garlic and onion provide a savory foundation, while diced carrot and celery lend a subtle sweetness and crunch. Fresh parsley not only adds a pop of color but also a burst of freshness, complemented by a pinch of salt and pepper to taste, which rounds out the flavors.
To finish off this dish, a squeeze of lemon juice adds a zesty brightness that perfectly balances the richness of the risotto, and of course, a splash of white wine is essential; it infuses the dish with acidity and depth, making the risotto truly complete.

Ingredients: medium, total time: 90 min., 3 servings
Olive oil EVO to taste
1 medium onion finely chopped
1 celery stalk/ finely chopped
3 thin stalks of parsley
2 San Marzano tomatoes//or 5 cherry tomatoes
8 medium shrimps/cleaned
100g small cleaned prawns
1 kg clams with shells
200 g medium squids/ 4 pieces
250 ml white wine / divided
3 full Tbsp tomato passata sauce/ or 1 full tomato concentrate +100 ml/ water
salt and pepper black pepper to taste
750 ml of vegetable broth
4 cloves of garlic/ divided
1 cup of washed rice / 250 g
2 Tbsp parsley leaves / finely chopped or ti taste
Preparation:
Preparation of ingredients:
Initially, gather and prepare all ingredients as previously outlined.
Finely chop the onion, celery, and carrot, or use a food processor for convenience.
Dice the tomatoes into smaller pieces.
Prepare the broth.
Thoroughly clean the shells using a metal scrubber and remove the mussel beards.
Clean the squid by removing the insides, separating the body from the head, and slicing into rings.
Peel the shrimp, retaining the shells for later use in the sauce.
Rinse the rice thoroughly under cold water and set it aside.
Preparation of Mussels:
In a large pan, heat olive oil and two crushed garlic cloves over low to moderate heat.
Once the aroma of the garlic is released, add the mussels and sauté for approximately 3 minutes, stirring occasionally. Then, pour in 150 ml of wine.
Cover the pan and cook for about 10-12 minutes, stirring occasionally, until the mussels open. Discard any that remain closed. Add the clam liquid to a blender with the garlic and blend with an immersion blender until a creamy consistency is achieved, then set aside.
Reserve a portion of the mussels in their shells for garnish (approximately 9 pieces), and clean the remaining mussels, setting them aside.
Preparing the sauce:
Wipe the pan clean with a kitchen towel, then add olive oil and chopped onion. Sauté for approximately 3 minutes until the onion becomes translucent, then incorporate the chopped carrot, celery, and parsley stalks. Continue to mix thoroughly for about 5 minutes.
Add the tomatoes and cleaned shrimp shells, stirring well for around 2 minutes.
Introduce the tomato passato sauce and 120 ml of broth, stirring for approximately 3 minutes. Subsequently, add the remaining broth, cover the pan, and cook for about 40 minutes until the liquid is reduced by half.
Thoroughly blend the sauce using a stick mixer, then strain it through a sieve.
Set the filtered sauce aside and discard the solids left in the colander.
Frying shrimp, prawns and squid:
In the same cleaned pan, add olive oil and two crushed garlic cloves. Introduce all the cleaned shrimp and prawns sauté them and twist for approximately 3-4 minutes,
Subsequently, remove the shrimp, cut them into smaller pieces, and set them aside.
In the same pan with the remaining oil, promptly add the squid and stir until they change color. Then, pour in 50 ml of wine and allow it to simmer for another 2-3 minutes.
Once the squid are cooked, remove them and combine the remaining sauce from the pan (excluding the garlic) with the clam sauce, stirring to mix.
Preparation of risotto:
In a clean deep frying pan, add olive oil and heat it over low to moderate heat.
Add the rice and fry for approximately 1-2 minutes. Then, add 50 ml of white wine. Once the alcohol evaporates, pour in the white liquid from the clams. As the rice absorbs the liquid, gradually incorporate the red liquid from the shrimp and vegetables.
Cook the rice until it reaches an al dente texture.
Immediately add the squid, shrimp, and a portion of the cleaned mussels. Mix the ingredients thoroughly, cover with a small amount of liquid, and cook for an additional 5 minutes. Control taste add salt and black pepper as needed.
Drizzle a little olive oil or butter over the dish, mix well, sprinkle with chopped parsley, and cook for about one minute before turning off the heat.
Serving:
Serve the risotto in deep plates, arranging the mussels with their shells around the risotto. Garnish with a few pieces of cleaned mussels on top and accompany with lemon slices.

Tips and Advice:
Carnaroli rice can be used as an alternative to Arborio rice.
To save time, consider purchasing pre-cleaned mussels.
Cherry tomatoes or three tablespoons of tomato pulp can substitute San Marzano tomatoes.
Plain water with added soup cubes can replace broth.
Risotto is typically prepared in quantities sufficient for immediate consumption, as leftovers are not recommended. If there are any leftovers, it is advisable to consume them the same evening.
