Ingredients: simple, total time 35 min., 2 servings
250 g of Calamarata -pasta/ Mezza Maniche Italian
500 g of medium or large cleaned squid-calamari
300 g of cherry tomatoes/ cut in half
100 ml glass of white wine
3 cloves of garlic/ minced
1 whole red chili pepper to taste
Olive oil EVO to taste
1. 5 Tbsp fresh parsley leaves/ finely chopped
salt and pepper to taste
1 flat tsp oregano
1/2 tsp thyme to taste

When preparing calamari, ensure it is not overly moist, aiming for a drier texture.
Slice the squid into fillets, creating rings approximately 1.5 cm thick.
Finely chop the garlic and fresh parsley, while keeping the chili pepper whole.
Cut the tomatoes into smaller slices or square pieces.
Use a deep pot for the pasta, add a teaspoon of salt, and wait for it to boil.
Preparation Calamarata:
In a wok pan if you have one, pour olive oil to warm it up, on mild to moderate heat.
Pour the sliced squid, season to taste with salt and black pepper. Stir and simmer about 5-7 minutes to take a little color.
Add finely chopped garlic and hot chili pepper in a piece, simmer for about 2 minutes.
Pour a little dry white wine, let it simmer 7-10 minutes to let the alcohol evaporate.
Add chopped tomatoes leave to simmer for up to 10 - 12 minutes, with occasional stirring. Now add herbs oregano and thyme, stir well. Cover wok pan.
Wait for the tomatoes to soften and make a bit salsa.
Control taste add salt and pepper as needed. try the salsa if you need salt.
Now strain the prepared pasta well and immediately combine it in a pan with squid and sauce, stir them well, let the fire work for another 1-2 min.
