Bark:
250 g butter
4 eggs
150 g of semolina
200 g of sugar
70 g -100 g flour
70 g shredded coconut
200 g of Greek yogurt
1 bag baking powder
pinch of salt
1 bag vanilla sugar
1 tablespoon grated lemon zest
Syrup:
500 ml of water
300 g of granulated sugar
1 lemon juice
Vanilla cream:
1. 2 liters of milk
120 g density/ cornstarch
3 egg yolks
200 g of granulated sugar
1 bag vanilla sugar
100 g butter
cinnamon for sprinkling to taste
Preparation:
Turn on the oven to preheat to 180°C
Bark:
Separate the egg yolks from the egg whites.
Whisk together the sugar and butter into a frothy cream, then add the egg yolks one by one.
Then add yogurt, lemon zest, vanilla sugar, baking powder, coconut, semolina and flour.
In another bowl, beat the egg whites and add them to the previous mixture, stirring gently with a spatula.
Pour the mixture into a greased pan (oil and flour) and bake for about 35 - 40 minutes.
The dough must be compact and thick.
Syrup:
Boil sugar and water with lemon until the sugar dissolves.
Lightly pour hot syrup over the hot cake and let the cake cool down a bit.
Vanilla cream:
Bring a liter of milk with sugar and vanilla sugar to a boil in a medium saucepan at a moderate temperature.
Mix the thickener and the yolk into the rest of the milk, then pour it into the boiled milk and stir until the filling thickens.
Stir the butter into the hot filling and pour the cream over the biscuits.
Sprinkle the cake with cinnamon and refrigerate before serving.
