Turkish Dessert: Kadaif - An Original Recipe

Traditionally prepared on the eve of Eid, this dessert holds a special place in Turkish culture and is often associated with festive occasions and family gatherings. Its origins trace back to the Middle East and it is believed to have made its way to Palestine before arriving in Turkey around the 18th century, where it quickly gained popularity among locals.

Ingredients: cup measure =200 ml, simple, total time: 45 min.

For Kadaif:

  • 350 g shredded phyllo dough (kadayıf)- chopped

  • 100 g butter

  • 5 Tbsp granulated sugar

  • 1 cup ground walnuts


For the Custard:

  • 125 g butter

  • 1 cup of flour

  • 1 liter of milk

  • 1 cup granulated sugar

  • 1 packet vanilla powder


For Decoration:

  • 50 g pistachio chopped

  • 50 g Currants, cranberries

Preparation:

Preparation Kadaif:

  1. Using a knife, cut the kadaif dough phyllo into smaller pieces and place them in a bowl.

  2. Melt the butter in a large saucepan over low-medium heat.

  3. Add five spoons of sugar and stir until the sugar is absorbed.

  4. Incorporate the kadaif dough, mixing for a few minutes until well combined.

  5. Add the ground walnuts and stir again until thoroughly mixed.

  6. Transfer the completed mixture to a larger bowl.


Preparation of powder pudding:

  1. In a medium saucepan, melt the butter over low to medium heat.

  2. Add the flour and stir thoroughly with a whisk until smooth, ensuring there are no lumps.

  3. Gradually pour in all the milk and sugar, stirring continuously until the mixture thickens into a cream.

  4. Remove from heat, incorporate the vanilla pudding, and blend with a mixer.

  5. Allow the cream to cool for a few minutes.


Layering kadaif:

  1. Butter a suitable container, place more than half of the mixture at the bottom, and flatten it using a spoon.

  2. Evenly distribute the pudding over the entire surface and smooth it out.

  3. Carefully spread the remaining kadaif dough over the pudding and level it.

  4. Refrigerate the cake for 1-2 hours.

  5. Once cooled, cut the cake into desired cubes and adorn each piece with currants and pistachios in the center.

NOTE:

Tips and Advice:

  • For an alternative version of vanilla cream without flour and butter, you will need 3 packets of vanilla pudding, 1 liter of milk, and 200 g of sugar. Optionally, grated lemon peel can be added at the end.

    Instructions: Whisk the vanilla pudding with 200 ml of milk. Heat the remaining milk with sugar over low to moderate heat. Once the milk begins to boil, reduce the heat and add the pudding mixture. Stir continuously until the cream thickens. Add lemon peel and mix thoroughly.
