  • If you’re looking for a delightful dish that combines tenderness and flavor, then this recipe for pork fillet with white wine sauce is perfect for you. This culinary creation features succulent pork fillet, which is renowned for its juicy texture and mild flavor, perfectly complemented by a rich and aromatic white wine sauce. The combination of these ingredients not only makes for a delicious meal but also elevates your dining experience, whether it’s a casual family dinner or a special occasion.

Ingredients

To prepare this exquisite dish, you will need the following ingredients:

- 500 grams of pork fillet

- 1 cup of dry white wine (such as Sauvignon Blanc or Pinot Grigio)

- 2 tablespoons of olive oil

- 2 cloves of garlic, minced

- 1 small onion, finely chopped

- 1 tablespoon of fresh thyme leaves (or 1 teaspoon of dried thyme)

- 1 tablespoon of Dijon mustard

- 200 ml of heavy cream

- Salt and pepper to taste

- Fresh parsley for garnish

Instructions

1. Preparation of the Pork Fillet: Begin by trimming any excess fat from the pork fillet. This step is crucial as it helps to enhance the flavor and texture of the meat. Once trimmed, season the fillet generously with salt and pepper. Allow it to rest at room temperature for about 15 minutes. This will help the meat cook more evenly.

2. Searing the Fillet: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully add the pork fillet to the skillet. Sear the meat on all sides until it develops a beautiful golden-brown crust, which should take about 3-4 minutes per side. This step is essential, as it locks in the juices and provides a depth of flavor.

3. Creating the Sauce: Once the pork is seared, remove it from the skillet and set it aside on a plate. In the same skillet, add the finely chopped onion and minced garlic. Sauté them for about 2-3 minutes until they become translucent and fragrant. This will infuse the oil with their flavors, which will be the base of your sauce.

4. Deglazing with Wine: Pour in the dry white wine, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. These bits add an incredible depth of flavor to the sauce. Allow the wine to simmer for about 5 minutes, reducing it slightly, which will concentrate its flavors.

5. Finishing the Sauce: Stir in the Dijon mustard and fresh thyme, mixing well. Then, slowly pour in the heavy cream, stirring continuously until the sauce is smooth and creamy. Allow it to simmer for an additional 5 minutes, letting it thicken slightly. Taste and adjust the seasoning with more salt and pepper if necessary.

6. Cooking the Pork: Return the seared pork fillet to the skillet, spooning some of the sauce over the top. Cover the skillet with a lid and let it simmer gently for about 10-15 minutes. This will ensure that the pork cooks through while absorbing the flavors of the sauce. Use a meat thermometer to check for doneness; the internal temperature should reach 145°F (63°C).

7. Serving: Once the pork fillet is cooked to perfection, remove it from the skillet and let it rest for a few minutes on a cutting board. This resting period allows the juices to redistribute throughout the meat, ensuring that each slice is tender and juicy. After resting, slice the pork into medallions and arrange them on a serving platter. Drizzle the creamy white wine sauce generously over the top and garnish with freshly chopped parsley for a pop of color.
