500 g thin-crust
oil
Fill:
400 g salted cheese /salty fresh cow's cheese
50 g white salted Greek feta cheese
3 eggs
1 spoon of baking powder
1 cup of yogurt /200 ml
Topping:
150 ml milk
1 egg
Preparation:
Thoroughly mash the cheese with a fork to ensure it integrates well into the gibanica (cheese pie). Add half a packet of baking powder, one cup of yogurt, and three eggs. If the cheese is not salty, add salt as needed. Mix the ingredients thoroughly.
Prepare a baking tray by greasing it with oil. Place three pastry sheets on the bottom and two on the sides, arranging them in a cross shape. Reserve three sheets to cover the pie later.
Dip the remaining pastry sheets in the filling and place the crumpled sheets into the tray. Once all the sheets are used, cover the pie with the three reserved sheets. Finally, fold the two side sheets over the top.
Prepare a topping by whisking one egg with 150 ml of milk in the bowl previously used for the cheese. Pour this mixture over the gibanica, gently shaking the tray in a circular motion to ensure the topping penetrates each layer. Use a knife to make horizontal cuts.
Bake at 200°C for 20 minutes.

If you want a less crunchy gibanica and soft pie, then after baking, sprinkle with a little water or mineral water if you want!
